First off I'm going to say this isn't a cheap mummy recipe, my OH hates aldi and to be honest we rarely go out anymore so food is our luxury. Over the next few months I intend to give you some of our recipes which taste great and are easy to make.
Ingredients
2 large chicken breasts
2 medium onions
2/3 of a 190g (about 130g if you like to measure) jar of Pesto
1 teaspoon full of a spice paste (I've used everything from red curry paste to green curry paste)
Handful of sweetcorn
250ml of double cream
A splash of full fat milk
Method
- Dice the chicken into 1cm cubes
- Add to a pan (coated in 1cal spray if you prefer) and fry until white
- Whilst the chicken is cooking chop the onions
- Once the chicken is white added the onions to the pan and cook until soft
- Stir in the pesto and heat for around 1 minute
- Set the pasta to boil
- Add the double cream
- Add a splash of full fat milk
- Heat until the sauce thickens
- Serve with pasta and garlic break
- Enjoy!!!
